Raw Food Lunch: Cali-Avocado Sandwich

This is the yummy raw food sandwich I made for lunch. It is 100% vegan, raw and gluten free! It is freakin' delicious and super easy to make. You'll need to make the bread the night before so that it has enough time to become firm.

Crunchy Raw Bread
Serves 4-6
1/2 apple
1/2 onion
1 1/2 cups of chopped walnuts
Lemon pepper seasoning
Pinch of salt

Sandwich Toppings:
Avocado slices
Parsley
Tomato
Quinoa (soaked)
Purple cabbage (grated)

Begin by placing all of the bread ingredients in a food processor or blender. Blend into a thick "dough". Using a spatula, spread out the mixture into bread shaped slices onto your dehydrator. If you don't have a dehydrator, you can use an oven instead! Simply put the mixture onto an un-greased baking sheet turn your oven to 105 degrees and prop the door open so that the air can circulate. Dehydrate it at 105 degrees for 4 hours. Make sure you turn it over halfway to ensure both sides are thoroughly dry.

Take a handful of quinoa grains and place them in a bowl with warm water, a little garlic and some sea salt. Leave to soak while bread is drying. Once soaked, drain the quinoa and toss it with your favorite (raw) dressing. Set aside.

To make the sandwich, take out the avocado and warm to room temperature. Cut into thin slices and sprinkle with lemon juice and black pepper. Place directly on top of one slice of the crunchy bread. Chop up a few slices of tomato and parsley and sprinkle in a tsp of the quinoa.  Mix together and add on top of avocado.  Add grated purple cabbage as a side.
